Crown Roast with Apple Stuffing

Yields1 Serving

 2 kg Crown roast of lamb or pork (approx. 4 pounds/1.8 kg)
 5 ml 1 tsp Watkins Organic Garlic Powder
 5 ml 1 tsp Watkins Pure Ground Black Pepper
 90 ml 6 tbsp butter
 15 ml 1 tbsp Watkins Organic Onion Powder
 15 ml 1 tbsp poultry seasoning
 10 ½ ml 1/2 tsp freshly-ground Watkins Organic Mediterranean Sea Salt
 2 ml 1/4 tsp Watkins Pure Ground Black Pepper
 250 ml 1 cup chopped celery
 250 ml 1 cup chopped celery
 750 ml 3 cups chopped unpeeled red apple
 125 ml 1/2 cup chopped walnuts
  Bacon or side pork

Rub roast with garlic salt and pepper; place in large shallow roasting pan. In large skillet, melt butter and sauté onion powder about 1 minute. Remove from heat and add poultry seasoning, salt and pepper; mix well. Add celery, bread cubes, apples and nuts; mix lightly but thoroughly. Fill roast with apple stuffing. Place bacon on top of rib ends to prevent charring. Cover top of roast and stuffing lightly with foil. Roast at 350°F/180°C for 30 to 35 minutes per pound.
