Maple and Rosemary Glazed Salmon in Lemon Pepper with Scallops with Baked Potato

I love to play with my food, and this is what I dished up for Supper tonight! Maple and Rosemary Glazed Salmon in Lemon Pepper with Scallops. No real recipe, just years of playing with my food! Of course growing up Ina Fisherman’s Family and learning the intricacies of cooking seafood helps too! The key to cooking great seafood is not to over cook it. Manage that and Watkins Extracts, Herbs, and Spices, can help deliver a meal worthy of the plate, and pleasing to the palate! 

So, since I know some will want a Recipe, here’s what I did…

Preheat Oven to 350 F 

Then Take a Loaf Pan, 

Spay it with Watkins Cokking Spray, and lime loosely with enough aluminum foil to wrap about 1-1/2 Lbs of Salmon. 

Before placing The Salom in the foil, spray foil with Watkins Cooking Spray. The Spray on the pan will keep any leakage from sticking, and the spray on the foil will keep fish from sticking to foil, and impart a nice butter flavour. After spraying the foil sprinkle with Watkins Lemon Pepper, then add Watkins Maple Extract, careful not to use to much, and a little Watkins Rosemary Extract. Go lightly, no more than 1/4 – 1/2 Teaspoon of each. 

Close, and crimp, foil over salmon in the pan, so that the salmon is wrapped in the foil. Place in 350 F Over for about 25 minutes. You’ll have to judge, Salmon flakes when done, but don’t over cook it. 

Then, Spray a Frying Pan, I prefer Cast Iron, with Watkins Cooking Spray. Heat to high, Place Scallops in the pan with a little Butter, or Margarine, and turn the heat down to medium. Remember we want the Scallos lightly browned, but not over cooked. 

Serve that up with Rice, Pasta, or as I prefer, Baked Potato with lots of butter. I usually start my potato at 400 F and bake them for about 45 minutes. Then I turn my oven down to 350 F and place the pan with the foil wrapped salmon in the middle with the potato on the sides.
